Wusthof Classic Hollow-Edge Multi-Prep Knife : CHEFS introduces an innovative, outstanding addition to Wusthof Classic knives that combines the precision performance of a razor-sharp chef's knife and utility knife for split-second prep. The compact blade on this multi-prep knife is engineered to exacting detail, with a wide hearty spine providing the heft and rocking motion of a santoku, plus the quick-release of a hollow edge. Indentations on the blade reduce drag and channel juices to prevent sticking. The 4 1/2" blade is the perfect size to dice onions or potatoes, mince or crush herbs or garlic, with firm handling control. With the wide spine, this Wusthof chef's knife slices thin strips from plump bell peppers, wedges apples or sections citrus. The slight curve enhances balance and the rigid blade absorbs impact, allowing the clearance and precision to chop, mince and dice comfortably, without knuckles touching the cutting board. Efficient blade size results in lighter weight for repetitive prep, without hand fatigue. Wusthof's own PEtec edge yields a smoother, more refined edge, with dramatically-increased sharpness and retention along the entire length of the blade. Forged from of a single piece of Wusthof's own rust-free, high-carbon steel, this chef's knife boasts a precision bolster that allows cutting and sharpening along the entire edge and full use of the blade to the heel. Ergonomic high-impact handle ensures a comfortable grip. Triple-compression rivets secure the full tang to the handle for strength and longevity. Hand wash. Made in Germany. Lifetime manufacturer warranty. Since 1814, knives bearing the Wusthof name and the Trident logo have been crafted in the world's "Cutlery Capital", Solingen Germany. Today, in a state-of-the-art facility, that tradition of quality is ensured as old-world craftsmanship meets 21st century advanced technological production methods. Extremely sharp and works well except blade is too short for cutting large quantities. Unable to get a very good "rocking" motion going

I love the feel of the sauce pan and the way it heats. It is alot more versatile than the non stick 2 qt that I had been using. The only small problem can be clean up, especially if you want to maintain the "just bought" stainless steel look but I would highly recommend this sauce pan. It is well worth the cost!
