Norpro Ravioli Rolling Pin : Roll this ravioli rolling pin over dough, add filling into each rectangle, place a layer of dough on top and roll again to cut 1 1/4" Sq. raviolis. This rolling pin saves a great deal of time if used properly. The person who wrote the Norpro description has never made ravioli with this rolling pin. Roll out the bottom layer of dough...usually a circle of dough with a 30" diameter. Spread your filling on one half of the circle almost up to the outer edge. Fold the other half of the circle over the top of the half with the filling. So you now have a half circle of 30" diameter and 15" from the center of the diameter to the outer edge. Take this wonderful rolling pin and line up the first square at the straight edge of the diameter, and roll straight to the other end. As you roll and press down, the filling will be pushed out into each square opening. The approx. 1/4" wide wood spline seals the edges of each ravioli square as it squeezes the filling out into the raviolo.
