Treat these knives with great respect. I used the chef to slice an onion, and neatly sliced a plug out of my left pinkie in the process. The blade is so sharp that it didn't even hurt -- but it did require cauterizing to stop the bleeding! Seriously, these are great knives for serious cooks -- just be very careful with them!
