OMG bought this for my daughter. When in her Texas kitchen using this knife showing off my knife skills... (took a class) I just realized I had to have it in my Michigan kitchen. The open sections of the knife really release the product you are cutting. I have another 8" Wustof Chef's knife with the ridges imprinted in the blade, but this "new" design with actual open ridges is a neat improvement.
