The 12-inch pan is a great option, other than cast iron, which cooks similarly, but this unusual sized pan has a unique depth that I was looking for, to get a deep, wide area for deep frying or to sear without a lot of oil. Best of both worlds! As far as the other comments on the discoloration when wiped, I found that after initially seasoning the pan, according to the directions for 15 minutes with the potato skins in water, and I had added the water halfway up the pan, that the area that was seasoned did not give off a dark discoloration when wiped. I think I'll season the pan again, but go all the way up the sides of the pan, and that should, hopefully, eliminate any residue.

I chose this model, in the black onyx, after researching the others in the line of Kitchen-Aid because of its stronger motor than the Artisan and lower cost than the higher end model. And for the few dollars more than the Artisan, it made sense to go up in scale for more power. I like the lift also versus the tilt. A friend has the tilt and you can't see in the bowl unless you turn it off. It's a must-have for every serious baker and cook. If you think you're doing fine with a handheld mixer, there is no comparison. Your baking will improve 100% with the right tools -- this is one to be reckoned with. Efficienct, allowing for multi-tasking, so you can walk away. Dependable, durable, sturdy, easily wipes clean. Excellent creaming, beating, whipping. Fantastic volume for angel food cakes, meringues, glossy, smooth frostings. You will go to places you never thought you would attempt, e.g., bread making - the dough hook kneads well. Build your inventory with a choice of many add-on attachments - I have the wonderful pasta maker. This is a wonderful investment.

This is great for grilling not only paninis but shrimp, tuna and swordfish steaks, veggies, chicken, meat, etc. I bought this just before Krups came out with their Krups Griddler, which in addtion to the panini feature, it also opens up to a flatbed to cook pancakes, eggs, etc. on. Being more versatile, I would have purchased the Griddler if I hadn't had the panini grill. I think for the additional short money, it's probably a better investment. But if you're perfectly happy with a panini grill that grills everything else, its convenience is that it cooks quick, clean up is okay because it's a little awkward rinsing it in the sink. But a very good, performing product for what it is designed to do.

Oh, my gosh, no more blotting lettuces with paper towels, or using hand towels, then having to launder hoping the green stains wash out. I throw everything, e.g., lettuces, veggies into the bowl and spin. The salad comes out crystal clean, no water lingers on the tender greens, and the bowl can be used to serve the salad in. I was the first of my friends to buy this, and they've all purchased one after seeing the convenience and how efficiently this works. Definitely worth the money, a hundred times over.

I purchased the bakery pin (without handles), because I had my grandmother's old pin with the handles that took away from the length I needed to roll oiut dough. It was either the bakery or the French for me. I like the idea of the French for more control and smaller areas, so I might make that purchase in the future, but the bakery accomplishes the same plus more. It's especially great for rolling out pizza, all pies and cinnamon bun doughs. The pins are handmade in New England, which I love the idea of USA made. It washes well and dries quickly. Excellent quality tools make a definitive difference for the discerning cook, and this is a working pin that will be passed down to tuture generations.

I've been using this exclusively for spices as I have another grinder for coffee beans, and have only good to say about this product. Maybe a previous reviewer got a defective model, which can occur in any brand. Also, because of the difference in oils in coffee beans versus spices, you do want to keep separate grinders for each. It's easy clean, just dry wipe, excellent performance for my use and highly recommended.

Cast iron has been around for, nearly, forever, and I've had this pan for just about that long. Of recent, I've started using it more, because I need more iron in my diet, being vegetarian, and a health practitioner told me the cast iron pans have this benefit. Good 'ole American ingenuity. I found that it cleans beautifully with salt added to the pan while still hot. Then I scrub it with the salt, rinse with water and dry. Season occasionally in the oven with oil, but never let it soak in water. It's a great, basic pan that fries anything exceptionally well.

A simple pan, dedicated to specific use, I thoroughly enjoy and appreciate the fast and even heat distribution quality of the blue-black steel pan construction, which makes for cooking perfect crepes, pancakes, omellets, eggs, in addition to the durable weight and stay-cool handle. The only negative I have is that there was not consistency in the pan's construction, and I found small pits of rust on the backside of some pans and rough pieces of metal on the handle, upon inspection at the time of purchase. Otherwise, if you receive a pan without imperfection, it's well worth the purchase. Make sure you follow the directions on seasoning and wipe well; it does have a black residue.
