Chef'sChoice Pronto Manual Diamond Hone Santoku/Asian Knife Sharpener #463 : This 2-stage Asian Pronto 463 is extremely fast, outperforming other manual sharpeners on the market. In seconds, with precise angle control, this sharpener provides an ultra-sharp, arch-shaped edge on double-bevel straight-edge, serrated and Asian-style knives. With 100% diamond abrasive wheels, Stage 1 sharpens and Stage 2 hones and polishes knives producing a stronger, more durable edge on serrated knives. The Pronto 463 straightens and aligns dull, bent knife teeth. Diamond-coated abrasive wheels hold their shape indefinitely and sharpen any alloy. The Asian Pronto's Criss-Cross technology sharpens simultaneously "into" and "out of" the knife edge for a premium burr-free edge with plenty of bite. The Asian Pronto 463 ensures exact bevel angle control for a 15 degree bevel edge. Soft-grip handle offers a secure grip. I purchased a diamond head 463 sharpener because of a review I read in cook's choice Mag. in the hope that I finally would get one that did the job as advertised. I have gone through 3 or 4 others plus a stone that I couldn't master. None did the job! My wife is not a nag but she did nag me about dull knives until I used the 463. It is ergonomically satisfactory. It is very stable on the work surface and creates a very fine edge, also quick and easy to resharpen. With just a few strokes on the second stage it is as good as new. No more torn unsliced bread or shreaded chicken breastes. Very good product at the righr price.
