de Buyer Mineral Pan, Fry Pan : Made of 99% iron, the organic Mineral pan is the natural choice of conscientious cooks. With its 2-3mm thickness, this pan performs outstandingly well at high temperatures to quickly seal in vitamins and nutrients. Beautifully sears and grills foods that coated pans cannot. The more you use these Mineral pans, the better they perform, as these pans darken naturally and become nonstick over time. Free of chemicals, PFOA and PTFE coatings, these pans naturally enhance the flavor of steaks, seafood, omelettes, crepes and more, by sealing in nutrients under high heat. The sloped sides make blending and turning of ingredients easy. De Buyer takes a proactive approach toward ecologically-responsible cookware with the Mineral pan. I have been using All-Clad non-stick pans, which don't work very well. When I read about these, I had to try them. I love that they are free of chemicals. So far they are exceeding my expectations. I thought I would use them occasionally, but I find myself using one at least once a day, and choosing them over my traditional stainless steel All-Clad pans. As far as I can tell so far, they sear like a traditional finish pan, with a non-stick finish!
We are a busy household with two small kids & often end up soaking dishes to do later, so I was a little concerned about the extra care required. But since they are mostly non-stick, they clean up easily. I bought a brush for just these (w/o soap in it), then put on low on the stove to dry. Then use a little square of paper towel to wipe a little grapeseed oil on it.
The only drawbacks: They are a bit hard to store with the long handles, but I can work around that. And I have noticed a metallic taste a couple times. I hope this is only because they are new & not that well seasoned yet? Has anyone else noticed this? One time I used orange zest, so perhaps it was a reaction with the acid?

I've wanted a popover pan for quite some time, and finally made this purchase. I'm so glad I did. You just can't get close to the same results with a muffin pan. I bought a 6-cup and this mini 12-cup and our family prefers the mini size. Well, they puff up twice the size of the cup so it is in no way mini. My kids loved them too. The pan is even safe for the dishwasher. BTW, the batter dispenser on this site is awesome for dispensing popover batter quickly & easily, with no drips.
